THE ROLE

As a Butcher, you maintain high quality standards and will prepare meat, poultry, and fish using a wide variety of processes. Consistency and perfection are the two things you strive for when preparing food. You may be responsible for handling, deboning, trimming, tying, grinding, or tenderizing cuts of meat, while also being in charge of weighing, storing, and labeling properly.


Summary of Key Responsibilities

  • Ability to preform whole animal butchery techniques
  • Accurately and efficiently prepare the highest quality meats for our guests; compiling consistently with our standard portion sizes, kitchen rules, policies and procedures.
  • Assume 100% responsibility for quality of the meats
  • Adhere to all DHEC regulations for cleanliness and sanitation
  • Maintains a clean and sanitary work station area including tables, shelves and refrigeration equipment
  • Closes the kitchen properly and follows the closing checklist for kitchen stations. Assists others in closing the kitchen.
  • Attends all scheduled employee meetings and brings suggestions for improvement

Requirements for Success:

  • A minimum 2 years’ experience in kitchen preparation
  • Basic understanding of professional cooking and proficient knife handling skills
  • Basic food cost knowledge
  • Have a positive energy, be ready to assist fellow support staff and work as a team player
  • Must be able to speak, read and understand basic cooking directions
  • Ability to communicate effectively with managers, employees, and all guests
  • A flexible schedule to work days, nights, weekends and holidays
  • Constant standing/walking with occasional stooping, kneeling, pushing, pulling, or lifting
