As we continue expanding, we are seeking an F&B Controller to take ownership of food and beverage cost management, procurement strategy, and operational efficiency across all locations. The ideal candidate will be equally skilled in food and beverage cost controls, with a hands-on approach to operational oversight, ensuring strict adherence to recipes, inventory systems, and purchasing programs. 


Position Overview -


The F&B Controller is responsible for tracking costs, analyzing COGS, enforcing inventory and recipe compliance, improving purchasing efficiency, and ensuring profitability across the F&B program. This role requires regular travel to Five Iron Golf locations, providing on-the-ground support to ensure operational execution aligns with financial targets. 


Key Responsibilities -


Strategic Cost Control & Procurement 

  • Develop and execute a comprehensive purchasing and cost-control strategy for both food and beverage. 
  • Analyze and optimize COGS, identifying inefficiencies and implementing corrective measures. 
  • Drive strict compliance with purchasing programs, leveraging national vendor agreements to achieve savings. 
  • Improve beverage COGS through inventory management, portion control, and craftable implementation
  • Partner with finance & analytics teams to create actionable cost-reduction plans.

Operational Oversight & Compliance 

  • Travel regularly to locations to audit inventory practices, recipe adherence, and waste reduction efforts
  • Work with GMs and BOH teams to enforce strict portioning, prep, and service standards
  • Implement inventory management best practices to reduce variances and improve stock efficiency. 
  • Lead training initiatives to educate teams on COGS management, purchasing, and operational efficiencies. 
  • Ensure compliance with food and beverage safety regulations, supplier agreements, and internal policies

Beverage Program Support & Optimization 

  • Oversee Beverage COGS and inventory controls, ensuring compliance with costing models and recipe standards. 
  • Work with bar teams to monitor pour costs, waste, and adherence to cocktail specifications
  • Leverage data-driven insights to reduce losses, enforce POS reporting accuracy, and improve profitability. 
  • Partner with beverage suppliers to enhance program efficiency and negotiate better pricing on key products

Vendor & Supplier Management 

  • Build and maintain strong supplier relationships to ensure consistency and competitive pricing. 
  • Negotiate vendor contracts, bulk pricing, and service agreements that improve financial performance. 
  • Drive product quality and availability while minimizing supply chain disruptions. Cross-Functional Collaboration 
  • Partner with the Director of F&B, Culinary Team, and Operations Leadership to streamline cost control efforts
  • Work alongside finance and analytics teams to monitor trends and ensure purchasing efficiency. 
  • Collaborate on menu development, sourcing high-quality, cost-effective ingredients that meet business goals. 


Qualifications & Experience -

  •  7+ years of experience in multi-unit F&B operations, procurement, or financial management.
  • Strong background in food AND beverage cost control, inventory oversight, and vendor negotiation
  • Hands-on operational experience in restaurant, hotel, or hospitality-based F&B environments. 
  • Experience implementing procurement platforms, inventory management systems, and COGS reporting tools
  • Ability to travel regularly to locations across the U.S. for on-site support, training, and audits
  • Excellent analytical, problem-solving, and leadership skills with a proactive, detail-oriented approach
  • Experience with high-volume beverage programs, cocktail costing, and bar operations is a major plus

Compensation & Benefits -

  • Competitive salary ($113,000 - $167,000 based on experience).
